Vegetable Stock Paste

One of my favourite Thermomix recipes is the Vegetable Stock Paste. Simply chop, cook then puree vegetables, herbs, salt and a little oil then store in jars in the fridge or in the freezer. It will last about 3 months in the fridge.

1 tablespoon is approximately equivlent to a stock cube and makes up about 1cup of stock. This recipe makes about 1 litre of stock paste and only costs a few dollars. Unlike stock cubes you don't have to mix it with water prior. Sometimes I use this as a marinade for steaks etc.

Ingredients:

  • 200g sticks celery, chopped into 4cm lengths - keep leaves on

  • 2 carrots, chopped into rough slices - 3 cm thick approx

  • 1 onion, peeled halved

  • 1 tomato, halved

  • 1 l large zucchini, 2 cm slices approx

  • 2 cloves garlic

  • 1 bay leaf

  • 1 bunch parsley, fresh

  • few leaves basil,fresh

  • few leaves sage, fresh

  • 2 sprigs rosemary

  • 150 grams rock salt

  • 1 tbsp extra virgin olive oil

Method

  1. Place vegetables and herbs in bowl. Chop 10 seconds/speed 6. Use spatula while chopping

  2. Add salt and oil.

  3. Cook 20 minutes/Varoma/speed 1. Place basket on lid instead of MC.

  4. Blend 1 minutes/speed 9. Bring up to speed 9 gradually.

You can adjust the salt concentration to suit your taste. Reducing the salt content will reduce the storage time.
