Pikelets

I have a loverly bunch of pikelets. There they all are, just sitting in a row.

After making some butte and soft butter rolls I still had a little left over buttermilk so I thought I would make some pikelets. I did happen to run short on buttermilk, so I mixed a bit of milk and a few splashes of vinegar together and let it rest for 10 minutes before adding the the mixture.

I had an accidental slip with the bi-carb-soda and ended up with too much in the mixture but it seemed to not adversly affect it. I did however find that I needed a much lower temperature for these then I would normally use while frying various batters. It is always safer to start with a lower temperature and build it up if needed.
