Soft Butter Rolls

I had some left over buttermilk after turning some cream into butter. Thumbing through the Basic Cookbook I found Soft Butter Rolls, a small sweet bun perfect for spreading with sweet condiments and enjoying for breakfast or brunch.

Quickly mixing the ingredients and leaving them to rise, followed by rolling into small balls, another short rise time and then brushing with a little melted butter before baking.

These rolls turned out to be cute, sweet and very enjoyable. I tried them with some lemon butter from the Basic cookbook - they reminded me alot of scones. Next time I make them I think I will exchange the sugar for equal quanity of applesauce and reduce some of the buttermilk accordingly so make them slightly more nutrious.

The recipe said it makes 20 but I ended up with 25.
